Cinnamon Apple Overnight Oats With Pecan Crumble
Ingredients
- FOR OVERNIGHT OATS:
- ⅓ cup / 80 ml unsweetened almond milk
- ¼ cup / 20 g dry rolled oats
- 1 scoop Vanilla Shakeology
- ½ small apple, chopped, divided use
- 1 tsp. chia seeds
- ½ tsp. pure vanilla extract
- FOR CRUMBLE:
- 3 unsalted pecan halves, finely chopped
- 2 tsp. dry rolled oats
- 1½ tsp. almond flour
- ½ tsp. coconut sugar
- ½ tsp. extra-virgin organic coconut oil
- ¼ tsp. ground cinnamon
Instructions

To make overnight oats, combine almond milk, oats, Shakeology, ¼ apple, chia seeds, and extract in a jar (or sealable container); mix well. Seal jar; refrigerate for 4 hours or overnight.

To make crumble, combine pecans, oats, almond flour, sugar, oil, and cinnamon in a small bowl; mix well.

After refrigeration, top oatmeal with crumble and remaining ¼ apple. Store refrigerated in an airtight container for up to 24 hours.
