Strawberries and Cream Mousse
This delectably creamy Strawberries and Cream Mousse with Strawberry Shakeology is delicious on its own or in crepes!
- ½ cup/110g reduced-fat (2%) plain cottage cheese
- 1 scoop/40g Strawberry Whey (or Tropical Strawberry Plant-Based Vegan) Shakeology
- 2 Tbsp. unsweetened almond milk
- ¾ cup sliced strawberries
- 2 Tbsp. sliced almonds
To make filling, place cottage cheese, Shakeology, and almond milk in a blender; cover. Blend until smooth, scraping down sides as needed. If mixture is too thick, add more almond milk (or water) 1 Tbsp. at a time.
Spoon half of the cottage cheese mixture into a serving bowl; top with half of the strawberries. Repeat with remaining cottage cheese mixture and strawberries. Sprinkle almonds over top.
