Escape to a tropical paradise with this coconut and mango chia pudding recipe. Coconut milk beverage makes it extra creamy and fresh mango gives it the flavor of the islands.
- 1 cup / 240 ml unsweetened coconut milk beverage
- 1 scoop Café Latte Shakeology
- 1 tsp. tamarind paste
- 2 Tbsp. chia seeds
- ½ cup / 80 g chopped fresh mango
- 1 Tbsp. finely chopped unsalted macadamia nuts
Place coconut milk, Shakeology, and tamarind paste in blender; cover. Blend until smooth.
Pour coconut milk mixture into small glass bowl (or pint jar). Add chia seeds; mix well.
Cover; refrigerate for at least 4 hours or overnight, mixing after 2 hours.
Garnish with mango and macadamia nuts just before serving. Store refrigerated in an airtight container for up to 24 hours.
