Ingredients

  • Nonstick cooking spray
  • 1 cup / 240 ml 100% apple juice
  • ½ cup / 45 g oat flour
  • 3 scoops Snickerdoodle Shakeology
  • 1 tsp. apple pie spice blend (or cinnamon)
  • 1 tsp. baking powder
  • 4 large eggs
  • ½ cup / 120 g unsweetened applesauce
  • 1 Tbsp. + 1 tsp. pure maple syrup, divided use
  • 2 Tbsp. almond butter
  • 2 Tbsp. reduced-fat (2%) Greek yogurt

Instructions

  1. Preheat oven to 350° F (180 °C). Lightly coat a 6-cavity donut pan with spray; set aside.

  2. Heat apple juice in a small saucepot over medium-high heat until boiling; reduce heat to medium-low. Gently boil for 10 to 15 minutes, watching carefully to prevent burning, until thickened and approximately 2 Tbsp. remain. Set aside to cool; mixture will thicken more.

  3. Add oat flour, Shakeology, apple pie spice, and baking powder to a small mixing bowl; stir to combine.

  4. Add eggs, applesauce, 1 Tbsp. maple syrup, and almond butter to a separate bowl; whisk to combine. Add dry mixture to wet mixture; stir to combine. Divide batter evenly in donut pan.

  5. Bake for 18 to 20 minutes. Let cool in pan.

  6. Combine yogurt, remaining 1 tsp. maple syrup, and reduced apple juice in a small mixing bowl.

  7. Drizzle yogurt mixture evenly over donuts.

  8. Serve immediately. Refrigerate leftovers in an airtight container for up to 4 days or freeze for up to 1 month. Heat gently before serving, if desired.
