Melon Mint Soup
This Mint Melon Soup with Collagen Boost is a life-saver when it's swelteringly hot outside and the last thing you want to do is turn on the oven.
Ingredients
- 1 cup chopped honeydew
- 1 cup chopped cucumber
- ½ cup unsweetened coconut milk beverage
- 1 Tbsp. fresh lime juice
- 2 scoops Collagen Boost
- 16 mint leaves
Instructions

Place honeydew, cucumber, coconut milk, lime juice, Collagen Boost, and mint in a blender; cover. Blend until smooth.

Serve immediately, or store refrigerated in an airtight container for up to a day.
