Decadent Chocolate Chip Cookies
The nutrition in Shakeology turns these chocolate chip cookies into a superfood dessert.
- Parchment paper
- 3 scoops Vanilla Shakeology
- ½ tsp. baking soda
- 1 pinch sea salt (or Himalayan salt)
- ¼ cup / 55 g unsalted butter (organic grass-fed, if possible), melted
- ¼ cup / 50 g brown sugar
- 1 tsp. pure vanilla extract
- 1 large egg
- ½ cup / 85 g semisweet (or dark) chocolate chips
- 1 to 2 Tbsp. unsweetened almond milk (as needed)
Preheat oven to 375° F (190 °C). Line a large baking sheet with parchment paper; set aside.
In a small mixing bowl combine Shakeology, baking soda, and salt; set aside.
Add butter, brown sugar, and extract to a medium mixing bowl; beat until creamy.
Add egg; beat until combined.
Gradually add Shakeology mixture to butter mixture. Beat until uniform dough forms.
Add chocolate chips; stir to incorporate. If dough is very crumbly add almond milk, 1 Tbsp. at a time, until dough sticks together.
Using a spoon or scoop, measure out 12 equal balls of dough, approx. 3 Tbsp. each; arrange evenly on prepared baking sheet.
Bake for 11 to 13 minutes or until golden brown and still soft in the center. Cool on sheet for 2 minutes before transferring to cooling racks. Let cool completely.
Store leftover cookies in an airtight container at room temperature for up to 4 days.
