Peaches and Cream Mug Cake

Ingredients

  • Nonstick cooking spray 
  • 1 large egg
  • cup / 80 g unsweetened applesauce
  • 1 scoop Snickerdoodle Shakeology
  • ½ large peach, chopped (or ½ cup canned sliced peaches, packed in juice)
  • ½ tsp. pure vanilla extract
  • cup / 80 g reduced-fat (2%) plain Greek yogurt
  • ½ tsp. maple syrup
  • ¼ tsp. ground cinnamon

Instructions

  1. Coat the inside of a microwave-safe mug with spray.  

  2. Add egg to mug; lightly beat with fork. Add applesauce, Shakeology, peach, and vanilla extract; stir until well incorporated.  

  3. Microwave on high for 2 to 3 minutes.

  4. While mug cake cooks, combine yogurt, maple syrup, and cinnamon in a small bowl.

  5. Spoon yogurt mixture onto mug cake. Serve immediately.
