Dark Chocolate Banana Fudgy Bars

These Shakeology bars are the answer to your chocolatey fudgy dreams. They're super easy to make — all you need are 7 ingredients and 25 minutes!

Ingredients

  • Nonstick cooking spray
  • 4 large pitted dates
  • 1 large ripe banana
  • ½ cup / 45 g unsweetened cocoa powder
  • ¼ cup + 2 Tbsp. / 95 g all-natural cashew butter (or peanut butter)
  • 2 scoops Chocolate Caramel Brownie Plant-Based Vegan Shakeology
  • 1 tsp. pure vanilla extract
  • 1 pinch sea salt (or Himalayan salt)

Instructions

  1. Line an 8 x 8-inch (20 x 20-cm) dish with parchment paper; coat lightly with spray. Set aside.

  2. Bring a small pot of water to a boil over medium-high heat. Remove from heat. Add dates; let soak for 15 minutes. Strain dates; reserve liquid.

  3. Add dates, banana, cocoa powder, cashew butter, Shakeology, extract, salt, and 2 Tbsp. reserved liquid (or water) to a food processor; cover. Process on high until a smooth dough forms. Press dough into prepared dish.

  4. Cut into 12 equal pieces. Enjoy immediately, or cover and refrigerate for 30 minutes or until firm. Refrigerate leftovers in an airtight container for up to 4 days.
