This nice cream recipe is definitely one you need to have in heavy rotation. It's so easy to make and an all-around crowd-pleaser.
Lightly coat a small baking sheet with spray. Arrange zucchini in an even layer; freeze until solid, about 4 hours.
Add zucchini, Shakeology, almond milk, cocoa powder, and extract to a high-powered blender (or small food processor); cover. Blend until very smooth, scraping down sides as needed. Add more almond milk, 1 Tbsp. at a time, if needed.
Serve immediately or freeze in an airtight container for up to 1 month. If frozen, allow to thaw for a few minutes before serving.
