Strawberry and Mint Pops

On a hot day, there’s nothing more satisfying than a mouth-puckeringly cold, sweet/tart, fruity popsicle.
While most popsicles tend to be made of sugar, sugar, and more sugar, these Strawberry and Mint Pops are made with strawberries, Shakeology, fresh lime, fresh mint, and water. That’s it.
These popsicles are fruity, minty goodness on a stick and they’re a healthy snack! It’s a win-win-win.
For the smoothest strawberry popsicles, blend all ingredients on high speed until liquified.
But if you want a bit of texture, reserve some of the strawberries, adding them only at the end. Pulse the blender a few times to roughly chop them, before pouring the mixture into molds.
We use Tropical Strawberry Plant-Based Vegan Shakeology in this recipe, but you could also use different Shakeology flavors if you prefer.
Strawberry or Vanilla Shakeology would also work as well.

Strawberry and Mint Pops
These Strawberry and Mint Pops are made with strawberries, Strawberry Shakeology, fresh lime, fresh mint, and water. That’s it.
Ingredients
- ¾ cup water
- ½ cup fresh (or frozen) strawberries
- 2 scoops Tropical Strawberry Plant-Based Vegan (or Strawberry) Shakeology
- 2 Tbsp. fresh lime juice
- 2 Tbsp. fresh mint, chopped
Instructions

Place water, strawberries, Shakeology, lime juice, and mint in blender; cover. Blend until smooth.

Divide evenly into four ice pop molds; freeze for at least four hours, or until set.

Serve immediately, or store in an airtight container in the freezer for up to 1 week.
